Kale is king! Packed with awesome vitamins and minerals kale is one of my ultimate superfood medicines. A wicked plant-based source of calcium and rich with Vitamin K for bone health and healthy blood clotting formation, kale is a fantastic additive to any salad or smoothie. This superfood seriously packs detoxification benefits as it is part of the cruciferous veggie group, also known as the brassica family.
Kale, like other members of the brassica family, contains health-promoting phytochemicals, sulforaphane and indole-3-carbinol (I3C) that appear to have cancer fighting effects, especially for estrogen dominant conditions such as breast cancer, PMS, endometriosis, fibroids and cysts. Ladies- we can’t afford to live without these deliciously bitter, yet tasty dark leafy greens!
Try this yummy quick and easy recipe for an simple way to add kale to your everyday life. Makes for a great quick snack alternative to chips, Doritos and popcorn on date night at the movies,plus it won’t leave your tummy aching in the morning.
CHEESY KALE CHIPS
- 1 whole head of kale, washed, patted dried & torn into bite size pieces
- 1/2 lemon, juiced
- 3-4 Tbsp olive oil
- 3-4 Tbsp nutritional yeast
- sea salt to taste
Tear kale into bite size pieces, ripping apart from stem. Add marinade ingredients to a bowl, mix together and then add kale, massaging marinade into the pieces until evenly spread. Spread evenly on baking sheet. Bake at 350°F for 6-10 minutes or until browned. Watch carefully as these can burn quickly. *The more nutritional yeast you add, the more cheesy these will be! Yum!
