Fall into Autumn with Carrot Lentil Soup!

It’s official.  Fall is definitely here.  And so starts my favourite season to cook hearty homemade goodness—soup!  This weekend felt like the perfect time to kick off the fall season with a delicious batch of Carrot Lentil Ginger soup, amazing for feeling under the weather as many of us often do with the sudden change of season.  The combination of ginger, garlic & onion is one of my many natural secret weapons I use when I feel myself getting sick.  Ch-ch check out my fabulously delicious recipe below and watch yourself fall in love with this soup…

Carrot Lentil Ginger Soup

Ingredients

  • 4-5 cups organic carrots, chopped
  • 1 1/2 cups red lentils
  • 10 cups water, stock or organic vegetable broth
  • 1 1/2 cups red lentils
  • 1 large onion, chopped
  • 5-6 garlic, minced
  • 2 Tbsp organic coconut oil
  • 1/2 cup parsley, chopped
  • 2-3 Tbsp fresh ginger, chopped
  • 2 tsp curry, ground
  • 1 tsp cumin, ground
  • 1-2 tsp Celtic sea salt

Directions

Bring water to a boil and add lentils, cooking on low for 10-15 minutes. In a big pot sautee the onions,garlic and ginger in coconut oil on low for 5 minutes or until light to medium brown.  Once lentils are done rinse off thoroughly using a strainer and add to the pot.  Also add to the pot your water or vegetable stock and carrots.  Place on high until boiling occurs, add spices and parsley and then bring to a simmer for 20-25 minutes or until soft tenderness of carrots is achieved.  Remove from heat and let cool and serve OR let cool and add entire pot to a blender or food processer and puree.  Add parsley for garnish and extra flavor.  Serves approximately 6-8 people.  Can be frozen for future meal planning.

      • Thanks for the response. I’m wondering what the difference is between celtic sea salt and sea salt from anywhere else. Perhaps the reading you suggested will clarify that! BTW, that soup is delicious.
